Kale Power Salad + Last Minute Thanksgiving Recipes
Hi Friends, Happy Thanksgiving!! Hoping everyone has plans for an awesome meal today with friends and family. I made it safely back to Ohio yesterday and looking forward to a filling meal and a restful break.
Today I’m sharing some last minute recipe inspiration for your Thanksgiving feasts! These recipes are all pretty quick and easy. If you’re spending your holiday morning looking for last minute side dishes to share, I’m guessing you don’t have (or want to give) hours and hours to your kitchen today. No worries though, because these recipes all take 30 minutes or less from start to finish. I’m 100% a fan of both tasty AND easy meals, both very doable.
First recipe on the list, my Kale Power Salad. Guys, this salad has it ALL. It’s part sweet, part tangy, filling, and works either warm or cold. But please, let me share a little disclaimer before I share the recipe. This salad combines kale, quinoa, and pomegranate seeds. All of which have been glorified in popular culture as “super foods” as well as “good” foods for diet or weight loss. I don’t include them in this recipe to encourage that mindset. They are foods from this Earth, just like every other food from the Earth. Sure, they have lots of nutrients and fiber and they definitely ARE physically nourishing. BUT that doesn’t mean that eating this salad is going to make you a better person than someone who opted for stuffing, potatoes and rolls for dinner. Remember, food does not equal morality. Your meal choices cannot define your worth. Got it? Okay, good now that we’ve cleared that up, let’s get to the recipe!
As I said, the base of the salad is kale. I know a lot of people have mixed feelings about this fibrous veggie. Some of us love it, some hate it. There’s not much in between. If you’re not a fan right now I implore you to give it one more try! One thing that can make kale less harsh is making sure you massage it before adding it to a salad. Massaging it makes it much less tough and bitter which makes all the difference in the end.
Combine your nicely massaged kale with roasted butternut squash, quinoa, and pomegranate seeds and you’ve got yourself a gorgeous combo of veggies with lots of different flavors. Throw your dressing together and give the whole thing a toss, and viola, you’re done!! Check out the full recipe below!
